This estate is located in the north of the Libouranais at Maransin. Its name comes from the pine forest surrounding the ageing wine cellar. The vines grow on a slot of 26 hectare. The château benefits of rather good geographic specific location to grow wine 78-meter lift of the parcels, clay soil holding back the water and oceanic climate. Château Vieux Dominque is actually the second wine of Château Bois Noir.
Winemaking: No cold pre fermentation. The alcoholic fermentation stars at 15 degrees, maceration post fermentation at 30°c to extract some smoothness and then malolactic fermentation at 21 °.
Ageing: In French oak barrels during 12months (1/3 new barrels)
Vinification: Warm maceration before fermentation. Fermentation started at 15°C and slowly rises up to 24°C maximum in order to preserve the freshness of the fruit.
Malolactic fermentation at 21°C.

Bright garnet dress. The nose is full of Blackberry liquor. On the palate,
this wine smooth with tender kashmir tannins. To serve with a grilled red meat,
roast chicken and a wide variety of fine cheese.
